Now, here’s a taste of Maine–I love sea scallops, I love blueberries, and I know that YOU will love this most delicious Maine dish!  A sweet & savory, combo of fresh, wild-caught Maine sea scallops, AND wild Maine blueberry “caviar.” Okay, just imagine the yummiest “seafood dessert” ever served and this is it. I was inspired to re-created the Divine dish after enjoying it with Alex on a roof-top deck overlooking Boothbay Harbor last weekend. So very simple and easy, just pick up some fresh sea scallops and blueberries, (sea shells optional) corn-on-the-cob, grilled shrimp, steamer clams or whatever YOU like . This dish is so easy to put together…

Ingredients:

1 lb. sea scallops

1 cup wild blueberries

dash of sea salt & pepper

2 tbs.  pure maple syrup

4 tbs. butter

1 tbs. of fresh lemon (& wedges)

sprinkle of corn starch to thicken (optional)

Method:

Gather all of the ingredients, and place two saute’ pans on medium high heat, adding two tablespoons of butter to each.

Add 1 cup blueberries to the first pan, and to the second pan add the sea scallops.

Add the maple syrup to the blueberries, the lemon, sea salt & pepper, and stir the corn starch with a fork.

Turn the heat on low for both pans, flip the scallops over, careful not to over-cook…
